Christmas Treats

These are two of my most favorite Christmas treats ever!  Hope you enjoy them too:

Chocolate Philly Fudge
4 c. sifted powder sugar
1 8oz pkg cream cheese
4 1oz. squares unsweetened chocolate, melted
1 tsp. vanilla
Dash of salt

Gradually add sugar to softened cream cheese (I use a hand mixer), mixing until well blended.  Stir in remaining ingredients.  Spread into 8" square pan.  Chill several hours or overnight.  Makes 1 3/4 lbs.


Creamy Caramels (from Taste of Home/Marcie Wolfe)
1 c. sugar
1 c. dark corn syrup
1 c. butter or margarine
1 can (14 oz.) sweetened condensed milk
1 tsp. vanilla extract

Line an 8 inch square pan with foil and butter/spray with pam; set aside.  Combine sugar, corn syrup and butter in 3-qt. saucepan.  Bring to a boil over medium heat, stirring constantly.  Boil slowly for 4 minutes without stirring.  Remove from heat and stir in milk.  Reduce heat to medium-low and cook until candy thermometer reads 238 degrees (soft ball stage), stirring constantly.  Remove from heat and stir in vanilla.  Pour into prepared pan.  Cool.  Remove from pan and cut into 1-inch squares.  Wrap individually in waxed paper; twist ends.  Yield: 64 pieces

Fall Fun

These kids had lots of fun in the piles of leaves in our backyard.  They would cover each other up and then have me come outside- they thought they were hilarious when the jumped out and "scared" me :-)
